NYC is supposedly the trailblazer in all things mixology, so why are we just finding out about Malört. Our pals over in Chicago have long been using this bitter spirit - it's apparently served as a badge of pride among industry peeps (and those are our favorite peeps, natch). Zagat's Chicago blog takes a look at a number of Windy City cocktails that use this ingredient, which is apparently an "acquired taste" (aka disgusting). One of the drinks being poured is cheekily named the I'm Not Gonna Drink That - while it may not sound appetizing this is one aperitif that we definitely intend to try, if only because it's one of the few brands of bitter liqueur made in the USA.
