A vegetable turning up in your cocktail glass is nothing new - but one just-opened restaurant in Dumbo is using veggies in innovative and delicate ways that are far from the liquid version of a salad. Governor in Dumbo is one of the most exciting restaurants we've tried in a while - the menu of farm-to-table fare is completely unique and approachable at the same time. When you go you've got to start off with a beverage - a small list of farm-to-glass offerings are served. There's a 20/20 Margarita with ginger agave nectars and fresh carrot juice, a drink called the Lost Bees that features fennel-infused Pisco and our favorite, The Governors Lady, a tasty concoction that mixes Farmer's Organic Gin with red-beet infused St. Germain.
You'd never guess you were drinking beets - the drink is savory and earthy without being too "beety" (aka having the qualities that make little kids run screaming). The vegetable elements also give these beverages subdued but beautiful hues - that orange margarita is unlike any beverage we've encountered before (and we wouldn't be surprised if carrot juice starts appearing on more menus, if only just 'cause it's so purtty).
