West Village Bar Swine has packed people in since day one - it's one of those watering holes that's been designed to feel purposely downscale, but is actually anything but. The decor may look distressed, but plates heaped with house-made charcuterie stream forth from the kitchen, and some stellar cocktail mixing is going on behind the second-floor bar (which was standing-room only on our last visit).
If you haven't guessed it by the name, Swine keeps things focused on the pork. That focus includes the beverage program. Our favorite cocktail had to be the Pig in the City - a boozy mix of apple bitters, vermouth and - wait for it - bacon infused Overholt Rye. Drool. The bacon is actually very nuanced in this ditty - instead of a wallop of meat you get a nice and subtle smokiness, with a tad of pork. It's a savory option that can be treated as an appetizer as well as a aperitif.
